You're already starting on the demo-compatible path and frankly most GZD-only stuff is mediocre at best. Despite their basic sound which has been mocked to no end, just about every MIDI sounds decent with them (and was written using them). These are obviously the 'most legitimate' soundfonts. TBH consider ditching the Z-ports and just run Woof! which is the Crispy-successor port and is compatible with basically everything that isn't intended for some form of ZDoom (vanilla/boom/MBF/MBF21), and has many nice graphical features. With that outta the way, here are the best soundfonts I've found in my travels: Roland SCC-1 soundfonts, 'SCC1T2.sf2' and 'gm.dls'.
